On this summer day as our kitchen prepares a batch of Jalebi in #Santaclara I am tempted to share my experience with #indiansweet #Jalebi. Jalebi is the most popular sweet among South Asians. Jalebi is similar to funnel cake which we get at local county fairs in the USA. The difference between the two is that funnel cake is thick batter fried and served with whipped cream on top with sweet topping. Jalebi is made with medium thick fermented batter which is loaded onto pastry paper to push through a small hole in the paper to make a round like shape as it drops into medium heat oil to fry until crisp. Once its done its taken out of the oil and immediately soaked into sugar syrup for a short moment then taken out to serve warm or to cool. Typically in India Jalebi is served at the local fairs during the summer months as well as at weddings and celebrations.
